As many as you like. You'll be able to assign each of these as needed to users. If you are buying a lot of seats you may wish to consider a group subscription, which is easier to administor and may be cheaper.

Will my gift subscription renew?

No - it will not renew at the end of the subscription period, you will need to purchase a new subscription or the user can alternatively add a payment method.
